Olive Oil & Sea Salt Cheesecake with Greek Yogurt & Honey Filling and Macadamia Nut Topping

Ingredients:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 2 tablespoons Olive Oil
  • 1 teaspoon sea salt
  • 16 ounces Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1 cup plain Greek yogurt
  • 3/4 cup honey
  • 3 eggs
  • 1/2 cup chopped Macadamia nuts

Instructions:

  1. Preheat oven to 350°F.
  2. In a bowl, mix together graham cracker crumbs, sugar, olive oil, and sea salt until combined.
  3. Press mixture into the bottom of an 8-inch springform pan and bake for 10 minutes.
  4. In a mixing bowl, beat the cream cheese until smooth.
  5. Add in Greek yogurt, honey, and eggs, and mix until well combined.
  6. Pour filling over the prepared crust and sprinkle with chopped Macadamia nuts.
  7. Bake for 45-50 minutes, or until the center is set and the edges are lightly golden.
  8. Let cool to room temperature before chilling in the refrigerator for at least 2 hours before serving.
