Oreo Avocado Lime Cheesecake with Lavender Topping
Ingredients:
- 1 1/2 cups Oreo cookie crumbs
- 4 tablespoons unsalted butter, melted
- 16 oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
- 1 ripe avocado, pitted and mashed
- 3/4 cup granulated sugar
- 2 tablespoons all-purpose flour
- 3 large eggs
- 2 teaspoons lime zest
- 1/4 cup fresh lime juice
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/3 cup heavy cream
- 1 teaspoon dried lavender flowers
Instructions:
- Preheat the oven to 325°F and grease a 9-inch springform pan.
- In a small bowl, mix the Oreo crumbs and melted butter until thoroughly combined. Press the mixture into the bottom of the prepared pan.
- In a large mixing bowl, beat the softened Norman's Kosher Cholov Yisroel Cream Cheese, avocado, and sugar together until creamy and smooth.
- Mix in the flour, eggs, lime zest, lime juice, vanilla extract, and salt until well combined and smooth.
- Lastly, fold in the heavy cream and mix until fully incorporated.
- Pour the filling over the Oreo crust.
- Bake for 45-50 minutes, until the cheesecake is set but still slightly jiggly in the center.
- Remove from the oven and let it cool to room temperature.
- Chill in the refrigerator for at least 4 hours or overnight.
- Before serving, sprinkle the lavender flowers on top of the cheesecake.
