Oreo Avocado Lime Cheesecake with Lavender Topping

Ingredients:

  • 1 1/2 cups Oreo cookie crumbs
  • 4 tablespoons unsalted butter, melted
  • 16 oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1 ripe avocado, pitted and mashed
  • 3/4 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 3 large eggs
  • 2 teaspoons lime zest
  • 1/4 cup fresh lime juice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/3 cup heavy cream
  • 1 teaspoon dried lavender flowers

Instructions:

  1. Preheat the oven to 325°F and grease a 9-inch springform pan.
  2. In a small bowl, mix the Oreo crumbs and melted butter until thoroughly combined. Press the mixture into the bottom of the prepared pan.
  3. In a large mixing bowl, beat the softened Norman's Kosher Cholov Yisroel Cream Cheese, avocado, and sugar together until creamy and smooth.
  4. Mix in the flour, eggs, lime zest, lime juice, vanilla extract, and salt until well combined and smooth.
  5. Lastly, fold in the heavy cream and mix until fully incorporated.
  6. Pour the filling over the Oreo crust.
  7. Bake for 45-50 minutes, until the cheesecake is set but still slightly jiggly in the center.
  8. Remove from the oven and let it cool to room temperature.
  9. Chill in the refrigerator for at least 4 hours or overnight.
  10. Before serving, sprinkle the lavender flowers on top of the cheesecake.
