Caramel Dream Cheesecake
Ingredients:
- 1 box of Kosher Carrot Cake Mix
- 2 large eggs
- 1/3 cup of oil
- 16 ounces of Norman's Kosher Cholov Yisroel Cream Cheese, softened
- 1/2 cup of granulated sugar
- 1/2 cup of heavy cream
- 2 teaspoons of vanilla extract
- 1/2 cup of kosher salted caramel sauce
- 1/2 cup of fresh chopped pineapple
- 1/2 cup of diced kiwi
Instructions:
- Preheat your oven to 350°F.
- Prepare the crust. Begin by combining the carrot cake mix, 1 egg, and oil. Mix until well combined and transfer to a 9-inch springform pan.
- Using your hands or a flat measuring cup, press the mixture onto the bottom and slightly up the sides of the pan.
- Bake in preheated oven for 10 minutes and remove from the oven.
- Lower the oven temperature to 325°F.
- In a large bowl combine the cream cheese, sugar, and vanilla extract; beat until smooth and creamy.
- Add in the remaining egg and beat well. Add in the heavy cream and continue to beat until fully combined.
- Microwave the kosher salted caramel sauce briefly to make it easier to pour. Pour it over the crust, spreading it out evenly.
- Pour the cheesecake mixture on top of the salted caramel layer.
- Bake in preheated oven for 40-45 minutes, or until the center is almost set.
- Remove the cheesecake from the oven and allow to cool completely before refrigerating.
- Top the cheesecake with fresh pineapple and diced kiwi before serving.
