Say cheese! Meet your new personalized cheesecake recipe:

Caramel Dream Cheesecake

Ingredients:

  • 1 box of Kosher Carrot Cake Mix
  • 2 large eggs
  • 1/3 cup of oil
  • 16 ounces of Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1/2 cup of granulated sugar
  • 1/2 cup of heavy cream
  • 2 teaspoons of vanilla extract
  • 1/2 cup of kosher salted caramel sauce
  • 1/2 cup of fresh chopped pineapple
  • 1/2 cup of diced kiwi

Instructions:

  1. Preheat your oven to 350°F.
  2. Prepare the crust. Begin by combining the carrot cake mix, 1 egg, and oil. Mix until well combined and transfer to a 9-inch springform pan.
  3. Using your hands or a flat measuring cup, press the mixture onto the bottom and slightly up the sides of the pan.
  4. Bake in preheated oven for 10 minutes and remove from the oven.
  5. Lower the oven temperature to 325°F.
  6. In a large bowl combine the cream cheese, sugar, and vanilla extract; beat until smooth and creamy.
  7. Add in the remaining egg and beat well. Add in the heavy cream and continue to beat until fully combined.
  8. Microwave the kosher salted caramel sauce briefly to make it easier to pour. Pour it over the crust, spreading it out evenly.
  9. Pour the cheesecake mixture on top of the salted caramel layer.
  10. Bake in preheated oven for 40-45 minutes, or until the center is almost set.
  11. Remove the cheesecake from the oven and allow to cool completely before refrigerating.
  12. Top the cheesecake with fresh pineapple and diced kiwi before serving.
