Caramel Macchiato Cheesecake

Shortbread Base Ingredients:

  • 1 cup flour
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, softened

Cream Cheese Filling Ingredients:

  • 16 oz Norman's Kosher Cholov Yisroel Cream Cheese
  • 3/4 cup sugar
  • 3 eggs
  • 1 teaspoon vanilla extract

Caramel Macchiato Topping Ingredients:

  • 1/2 cup sugar
  • 1/4 cup water
  • 1/4 cup unsalted butter
  • 1/2 cup heavy cream
  • 1 tablespoon instant espresso powder

Directions:

  1. Preheat oven to 325°F.
  2. Mix flour, sugar, and butter until it resembles coarse crumbs.
  3. Press mixture onto the bottom of a 9-inch springform pan.
  4. Bake crust for 15 minutes or until lightly golden.
  5. In a bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese, sugar, eggs, and vanilla extract until smooth.
  6. Pour the filling into the crust and bake for 35 minutes or until the center is set.
  7. Remove from oven and let it cool to room temperature.
  8. In a saucepan, mix sugar and water and cook over medium heat without stirring until it turns amber color.
  9. Add butter and stir until completely melted and combined.
  10. Add heavy cream and espresso powder, whisk until well combined and it reaches a thick sauce consistency.
  11. Drizzle the caramel macchiato sauce on top of the cheesecake and let it set for at least one hour before serving.
