Caramel Macchiato Cheesecake
Shortbread Base Ingredients:
- 1 cup flour
- 1/4 cup sugar
- 1/2 cup unsalted butter, softened
Cream Cheese Filling Ingredients:
- 16 oz Norman's Kosher Cholov Yisroel Cream Cheese
- 3/4 cup sugar
- 3 eggs
- 1 teaspoon vanilla extract
Caramel Macchiato Topping Ingredients:
- 1/2 cup sugar
- 1/4 cup water
- 1/4 cup unsalted butter
- 1/2 cup heavy cream
- 1 tablespoon instant espresso powder
Directions:
- Preheat oven to 325°F.
- Mix flour, sugar, and butter until it resembles coarse crumbs.
- Press mixture onto the bottom of a 9-inch springform pan.
- Bake crust for 15 minutes or until lightly golden.
- In a bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese, sugar, eggs, and vanilla extract until smooth.
- Pour the filling into the crust and bake for 35 minutes or until the center is set.
- Remove from oven and let it cool to room temperature.
- In a saucepan, mix sugar and water and cook over medium heat without stirring until it turns amber color.
- Add butter and stir until completely melted and combined.
- Add heavy cream and espresso powder, whisk until well combined and it reaches a thick sauce consistency.
- Drizzle the caramel macchiato sauce on top of the cheesecake and let it set for at least one hour before serving.
