Strawberry Almond Cheesecake
Ingredients:
- 1 1/2 cups almond flour
- 4 tablespoons unsalted butter, melted
- 1/4 cup granulated sugar
- 16 ounces Norman's Kosher Cholov Yisroel Cream Cheese, softened
- 1/2 cup sour cream
- 1/2 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup strawberry puree
- 1 cup whipped cream
Instructions:
- Preheat oven to 350°F.
- To make the crust, combine almond flour, melted butter, and 1/4 cup sugar in a mixing bowl. Mix well.
- Press mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes. Set aside to cool.
- To make the filling, beat the cream cheese, sour cream, and 1/2 cup sugar together in a mixing bowl until smooth.
- Add eggs, one at a time, beating well after each addition.
- Stir in vanilla extract and strawberry puree.
- Pour the mixture into the prepared springform pan.
- Bake for 45-50 minutes or until the edges are set and the center is slightly jiggly.
- Let cool to room temperature and then chill in the refrigerator for at least 4 hours or overnight.
- To serve, carefully remove the sides of the springform pan and top with whipped cream.
