Strawberry Almond Cheesecake

Ingredients:

  • 1 1/2 cups almond flour
  • 4 tablespoons unsalted butter, melted
  • 1/4 cup granulated sugar
  • 16 ounces Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup strawberry puree
  • 1 cup whipped cream

Instructions:

  1. Preheat oven to 350°F.
  2. To make the crust, combine almond flour, melted butter, and 1/4 cup sugar in a mixing bowl. Mix well.
  3. Press mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes. Set aside to cool.
  4. To make the filling, beat the cream cheese, sour cream, and 1/2 cup sugar together in a mixing bowl until smooth.
  5. Add eggs, one at a time, beating well after each addition.
  6. Stir in vanilla extract and strawberry puree.
  7. Pour the mixture into the prepared springform pan.
  8. Bake for 45-50 minutes or until the edges are set and the center is slightly jiggly.
  9. Let cool to room temperature and then chill in the refrigerator for at least 4 hours or overnight.
  10. To serve, carefully remove the sides of the springform pan and top with whipped cream.
