Elderflower Dream Cheesecake
Ingredients:
- 8 oz Date & Walnut crust
- 24 oz Norman's Kosher Cholov Yisroel Cream Cheese
- 1 cup granulated sugar
- 1/4 cup Elderflower Liquor
- 4 large eggs
- 1 tsp vanilla extract
- 1/2 tsp salt
- 1/4 cup all-purpose flour
- For the fruit compote topping:
- 1 cup mixed berries
- 1/4 cup granulated sugar
- 1/4 cup water
- 1 tbsp lemon juice
Instructions:
- Preheat oven to 350°F.
- In a mixing bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese with sugar until light and fluffy.
- Gradually add in Elderflower Liquor and mix until fully incorporated.
- Add eggs one at a time, beating well after each addition.
- Stir in vanilla extract and salt.
- Sift in flour and mix until just combined.
- Pour the mixture over the Date & Walnut crust.
- Bake for 45-50 minutes, or until the center is set and the top is golden brown.
- Let the cheesecake cool to room temperature before refrigerating for at least 2 hours.
- For the fruit compote topping:
- In a saucepan, combine mixed berries, sugar, water, and lemon juice.
- Cook over medium heat, stirring occasionally until the berries are soft and the mixture has thickened, about 10-15 minutes.
- Let the compote cool before spooning over the cheesecake.
