Elderflower Dream Cheesecake

Ingredients:

  • 8 oz Date & Walnut crust
  • 24 oz Norman's Kosher Cholov Yisroel Cream Cheese
  • 1 cup granulated sugar
  • 1/4 cup Elderflower Liquor
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1/4 cup all-purpose flour
  • For the fruit compote topping:
    • 1 cup mixed berries
    • 1/4 cup granulated sugar
    • 1/4 cup water
    • 1 tbsp lemon juice

Instructions:

  1. Preheat oven to 350°F.
  2. In a mixing bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese with sugar until light and fluffy.
  3. Gradually add in Elderflower Liquor and mix until fully incorporated.
  4. Add eggs one at a time, beating well after each addition.
  5. Stir in vanilla extract and salt.
  6. Sift in flour and mix until just combined.
  7. Pour the mixture over the Date & Walnut crust.
  8. Bake for 45-50 minutes, or until the center is set and the top is golden brown.
  9. Let the cheesecake cool to room temperature before refrigerating for at least 2 hours.
  10. For the fruit compote topping:
    1. In a saucepan, combine mixed berries, sugar, water, and lemon juice.
    2. Cook over medium heat, stirring occasionally until the berries are soft and the mixture has thickened, about 10-15 minutes.
    3. Let the compote cool before spooning over the cheesecake.
