Lavender & Honey Cheesecake
Ingredients:
- 8 ounces of Norman's Kosher Cholov Yisroel Cream Cheese, softened
- 1/2 cup of honey
- 1/4 cup of culinary lavender
- 1/2 cup of graham cracker crumbs
- 4 tablespoons of unsalted butter, melted
- 1 teaspoon of vanilla extract
- 1 cup of heavy cream
Directions:
- Preheat your oven to 325 degrees F.
- In a bowl, combine graham cracker crumbs, melted butter, and honey. Mix until fully combined.
- Press the mixture into the bottom of a 9-inch springform pan and bake for 8 minutes. Allow to cool.
- In a saucepan, combine heavy cream and lavender. Heat on medium heat for 5 minutes.
- Strain the mixture through a sieve and discard the lavender buds.
- In a large mixing bowl, beat the cream cheese and vanilla until smooth.
- Add the lavender-infused cream to the cream cheese mixture and beat until fully combined.
- Pour the filling over the graham cracker crust and smooth the top.
- Refrigerate for at least 4 hours or overnight.
- Prior to serving, whip up the heavy cream until it forms soft peaks.
- Top the cheesecake with the whipped cream and garnish with fresh lavender buds.
