Creamy Basbousa Cheesecake with Whipped Cream Topping
Ingredients:
2 cups Basbousa cake mix
1 container (8oz) of Norman's Kosher Cholov Yisroel Cream Cheese
1/2 cup sugar
1/2 teaspoon vanilla extract
2 eggs
1 cup heavy cream
1/2 teaspoon almond extract
1/4 cup confectioners' sugar
Instructions:
Preheat the oven to 350°F. Grease a 9-inch springform cake pan.
Prepare Basbousa cake mix according to the package instructions.
Spread the prepared Basbousa cake mix evenly over the bottom of the prepared cake pan, and set aside.
Using an electric mixer, beat the Norman's Kosher Cholov Yisroel Cream Cheese, sugar and vanilla until smooth. Add eggs one at a time, beating well after each addition.
Pour the cream cheese mixture over the Basbousa cake mix in the cake pan.
Bake for 40-45 minutes or until the cheesecake is set. Allow to cool in the pan for 15 minutes, then remove the cheesecake from the pan and allow it to cool completely on a wire rack.
Using an electric mixer, whip heavy cream until soft peaks form. Add almond extract and confectioners' sugar and continue whipping until stiff peaks form.
Spread the whipped cream over the top of the cooled cheesecake. Optional: decorate with fruit or chocolate shavings.
