Ingredients:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 cups peeled, chopped apples
  • 2 tablespoons flour
  • 2 tablespoons sugar
  • 16 oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1/2 cup honey
  • 1/2 cup Greek yogurt
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup toasted almonds, chopped

Directions:

  1. Preheat oven to 350°F. Lightly grease a 9-inch springform pan.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, cinnamon, and nutmeg. Press mixture onto the bottom of the prepared pan.
  3. In a small bowl, combine chopped apples, flour, and sugar. Spread mixture evenly over the graham cracker crust.
  4. In a large mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese until fluffy. Add honey, Greek yogurt, eggs, and vanilla. Mix until well combined.
  5. Pour cream cheese mixture over the apple layer in the pan. Smooth the top with a spatula.
  6. Bake for 45-50 minutes or until center is set.
  7. Cool the cheesecake completely in the pan on a wire rack.
  8. Refrigerate for at least 2 hours or until well chilled.
  9. Before serving, sprinkle with toasted almonds on top.
