The Apple Cinnamon Cheesecake

Ingredients:

  • 1 1/2 cups almond flour
  • 1/4 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 16 oz Norman's Kosher Cholov Yisroel cream cheese, softened
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups peeled and diced apples
  • 2 teaspoons ground cinnamon
  • 1/2 cup toasted almonds, chopped

Directions:

  1. Preheat oven to 350 degrees F.
  2. In a small bowl, combine the almond flour, melted butter, 1/4 cup granulated sugar, and salt. Press mixture onto bottom of a 9-inch springform pan.
  3. Bake crust for 10-12 minutes. Set aside to cool.
  4. In a large bowl, beat the cream cheese and 1 cup sugar until smooth. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  5. Combine the diced apples and 1 teaspoon cinnamon in a small bowl. Mix well.
  6. Pour half of the cream cheese mixture over the crust. Spread the apple mixture evenly over the cream cheese mixture. Pour the remaining cream cheese mixture over the apple layer.
  7. Bake for 45-50 minutes, or until center is almost set. Remove from oven and let cool completely.
  8. Refrigerate for at least 4 hours or overnight.
  9. Before serving, sprinkle the top of the cheesecake with chopped toasted almonds.
