Cheesy Lime & Avocado Delight
Chilli Pepper & Caramel Base
- 12 oz of graham cracker crumbs
- 8 oz of melted butter
- 1/2 cup of brown sugar
- 1 tbsp of chilli flakes
- 1/4 cup of caramel sauce
Avocado & Lime Filling
- 32 oz of Norman's Kosher Cholov Yisroel Cream Cheese
- 2 ripe avocados, peeled and mashed
- 1 cup of sugar
- 4 large eggs
- 1/4 cup of lime juice
- 1/4 cup of all-purpose flour
Lime & Ginger Topping
- 1 cup of sour cream
- 1 tsp of vanilla extract
- 1/4 cup of sugar
- 1/4 cup of lime juice
- 1 tsp of freshly grated ginger
Mix the graham cracker crumbs, melted butter, brown sugar, chilli flakes and caramel sauce together. Press the mixture firmly into the bottom of a 9-inch springform pan and chill in the fridge for at least 30 minutes.
Preheat the oven to 325°F. Blend the cream cheese and sugar in a mixer until smooth. Add mashed avocados, eggs, lime juice and flour, and blend until the filling is well mixed. Pour the filling over the chilled crust in the pan and bake for 50-55 minutes, or until the center is set.
Cool the cheesecake completely. In a separate bowl, mix the sour cream, sugar, vanilla extract, lime juice and grated ginger together. Pour the mixture over the cheesecake and spread it evenly. Chill the cheesecake in the fridge for at least 3 hours before serving.
