Pistachio Crumble Cheesecake with Bourbon & Butterscotch Topping Recipe
Ingredients:
For the Pistachio Crumble base:
1 1/2 cups all-purpose flour
1/2 cup granulated sugar
1/2 cup (1 stick) unsalted butter, melted
1/2 cup shelled pistachios, roughly chopped
For the Cream Cheese filling:
16 oz Norman's Kosher Cholov Yisroel Cream Cheese, soft
1 cup granulated sugar
4 large eggs
1 tsp vanilla extract
For the Bourbon & Butterscotch topping:
1 cup heavy cream
1/2 cup brown sugar
1/4 cup (1/2 stick) unsalted butter
1/4 cup bourbon
Instructions:
Preheat the oven to 350°F (180°C). Grease a 9-inch (23cm) springform pan.
Make the Pistachio Crumble base: In a medium bowl, mix together flour, sugar, melted butter and chopped pistachios until it forms a crumbly mixture. Press it into the bottom of the prepared pan and bake for 10-12 minutes, until golden brown. Remove from the oven and let it cool while you prepare the filling.
Make the Cream Cheese filling: In a large bowl, beat the cream cheese with an electric mixer for about 1 minute. Add the sugar and beat until well combined and creamy. Add the eggs, one at a time, mixing well between each addition. Stir in the vanilla extract. Pour the cream cheese mixture onto the cooled pistachio base.
Bake for 45-50 minutes, until the edges are set and the center is slightly jiggly. Turn off the oven and leave the cheesecake in the closed oven for an additional 10 minutes. Remove the cheesecake from the oven and let it cool to room temperature.
Make the Bourbon & Butterscotch topping: In a medium saucepan, mix together the heavy cream, brown sugar, and butter. Cook over medium heat, stirring constantly, until the mixture begins to boil. Reduce the heat to low and simmer, stirring occasionally, for 5 minutes. Remove from the heat and stir in the bourbon. Let it cool to room temperature.
Pour the Bourbon & Butterscotch topping over the cooled cheesecake. Cover and refrigerate for at least 2 hours or until completely chilled before serving.
