Say cheese! Meet your new personalized cheesecake recipe:

Citrus Delight Cheesecake

Ingredients:

  • 1 1/2 cups of Lemon Bar mix
  • 6 tablespoons of unsalted butter, melted
  • 2 eight-ounce containers of Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1/2 cup of granulated sugar
  • 2 large eggs
  • 1/4 cup of heavy cream
  • 1/3 cup of lime juice
  • 1 tablespoon of lime zest
  • 1 tablespoon of ginger, grated
  • 1 tablespoon of honey

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch Springform pan.
  2. Mix the Lemon Bar mix and melted butter until crumbly. Press mixture into the bottom of the prepared Springform pan.
  3. Bake the crust for 10 minutes. Remove it from the oven and let it cool while you mix the filling.
  4. Beat the cream cheese and sugar together until fluffy. Add the eggs one at a time, mixing well after each addition.
  5. Mix in the heavy cream, lime juice, and lime zest until well combined. Pour the mixture over the cooled crust.
  6. Bake the cheesecake for 35-40 minutes, or until the center is almost set.
  7. Remove the cheesecake from the oven and let it cool to room temperature.
  8. Meanwhile, in a small saucepan, heat the grated ginger and honey over low heat for 1-2 minutes. Add a tablespoon of water if the mixture is too thick.
  9. Spoon the ginger and honey mixture over the cooled cheesecake. Chill the cheesecake for at least 2 hours before serving.
