Citrus Delight Cheesecake
Ingredients:
- 1 1/2 cups of Lemon Bar mix
- 6 tablespoons of unsalted butter, melted
- 2 eight-ounce containers of Norman's Kosher Cholov Yisroel Cream Cheese, softened
- 1/2 cup of granulated sugar
- 2 large eggs
- 1/4 cup of heavy cream
- 1/3 cup of lime juice
- 1 tablespoon of lime zest
- 1 tablespoon of ginger, grated
- 1 tablespoon of honey
Instructions:
- Preheat the oven to 350°F (175°C). Grease a 9-inch Springform pan.
- Mix the Lemon Bar mix and melted butter until crumbly. Press mixture into the bottom of the prepared Springform pan.
- Bake the crust for 10 minutes. Remove it from the oven and let it cool while you mix the filling.
- Beat the cream cheese and sugar together until fluffy. Add the eggs one at a time, mixing well after each addition.
- Mix in the heavy cream, lime juice, and lime zest until well combined. Pour the mixture over the cooled crust.
- Bake the cheesecake for 35-40 minutes, or until the center is almost set.
- Remove the cheesecake from the oven and let it cool to room temperature.
- Meanwhile, in a small saucepan, heat the grated ginger and honey over low heat for 1-2 minutes. Add a tablespoon of water if the mixture is too thick.
- Spoon the ginger and honey mixture over the cooled cheesecake. Chill the cheesecake for at least 2 hours before serving.
