Cheers to Wine and Berries Cheesecake

Ingredients:

  • 10 oz. pistachios, shelled
  • 1/4 cup granulated sugar
  • 4 oz. butter, melted
  • 16 oz. Norman's Kosher Cholov Yisroel Cream Cheese, room temperature
  • 1/2 cup granulated sugar
  • 1/2 tsp. vanilla extract
  • 2 large eggs, room temperature
  • 1/4 cup red wine
  • 1/2 cup mixed berries, chopped
  • 1/2 cup brandy
  • 1/2 cup cherries, pitted and chopped

Directions:

  1. Preheat oven to 325°F.
  2. In a food processor, pulse pistachios and sugar until finely ground.
  3. Add melted butter and pulse until combined.
  4. Press the crumb mixture onto the bottom of a 9-inch springform pan.
  5. Bake for 10 minutes.
  6. In a large mixing bowl, beat the cream cheese until creamy.
  7. Add sugar and vanilla extract, and beat until smooth.
  8. Add eggs, one at a time, beating until fully incorporated after each addition.
  9. Stir in red wine and mixed berries.
  10. Pour the mixture over the crust and smooth the top with a spatula.
  11. Bake for 45-50 minutes or until the filling is set and the edges are lightly golden.
  12. Remove from the oven and let cool on a wire rack for 10 minutes.
  13. In a small saucepan, heat brandy and cherries over medium heat.
  14. Cook until the sauce thickens, stirring constantly.
  15. Pour the sauce over the cheesecake and let it cool completely.
  16. Refrigerate the cheesecake for at least 2 hours before serving.
