Cheers to Wine and Berries Cheesecake
Ingredients:
- 10 oz. pistachios, shelled
- 1/4 cup granulated sugar
- 4 oz. butter, melted
- 16 oz. Norman's Kosher Cholov Yisroel Cream Cheese, room temperature
- 1/2 cup granulated sugar
- 1/2 tsp. vanilla extract
- 2 large eggs, room temperature
- 1/4 cup red wine
- 1/2 cup mixed berries, chopped
- 1/2 cup brandy
- 1/2 cup cherries, pitted and chopped
Directions:
- Preheat oven to 325°F.
- In a food processor, pulse pistachios and sugar until finely ground.
- Add melted butter and pulse until combined.
- Press the crumb mixture onto the bottom of a 9-inch springform pan.
- Bake for 10 minutes.
- In a large mixing bowl, beat the cream cheese until creamy.
- Add sugar and vanilla extract, and beat until smooth.
- Add eggs, one at a time, beating until fully incorporated after each addition.
- Stir in red wine and mixed berries.
- Pour the mixture over the crust and smooth the top with a spatula.
- Bake for 45-50 minutes or until the filling is set and the edges are lightly golden.
- Remove from the oven and let cool on a wire rack for 10 minutes.
- In a small saucepan, heat brandy and cherries over medium heat.
- Cook until the sauce thickens, stirring constantly.
- Pour the sauce over the cheesecake and let it cool completely.
- Refrigerate the cheesecake for at least 2 hours before serving.
