Island Delight Cheesecake Recipe

Ingredients:

  • 1 1/2 cups Almond Flour
  • 1/4 cup coconut oil, melted
  • 2 tablespoons maple syrup
  • 1/2 teaspoon sea salt
  • 16 ounces Norman's Kosher Cholov Yisroel Cream Cheese at room temperature
  • 1/2 cup full-fat coconut milk
  • 1/4 cup chia seeds
  • 1/2 cup honey
  • 1 teaspoon vanilla extract
  • 1 can pineapple chunks, drained and chopped
  • 2 kiwis, peeled and sliced

Instructions:

  1. Preheat oven to 350°F. Grease a 9-inch springform pan.
  2. In a medium bowl, mix together the almond flour, coconut oil, maple syrup, and salt. Press mixture onto the bottom of the prepared pan.
  3. Bake for 10-12 minutes or until lightly golden brown. Let cool completely.
  4. In a large bowl, beat the cream cheese until smooth. Add in coconut milk, chia seeds, honey, and vanilla extract, and continue to mix until well combined.
  5. Pour the mixture onto the cooled crust and smooth the top with a spatula.
  6. Refrigerate the cheesecake for at least 4 hours or overnight.
  7. In a saucepan, add the pineapple chunks and cook over low heat, stirring occasionally. Cook for 10-15 minutes or until the pineapple has softened. Let it cool.
  8. Top the cheesecake with the cooked pineapple and sliced kiwi.Serve chilled.
