Pistachio Delight Cheesecake
Pistachio Crumble Base
1 cup graham cracker crumbs
1/2 cup crushed pistachios
1/2 cup melted unsalted butter
Pistachio Filling
16 oz Norman's Kosher Cholov Yisroel Cream Cheese
1/2 cup granulated sugar
2 eggs
1/2 cup sour cream
1/2 cup heavy cream
1/2 cup chopped pistachios
Orange & Vanilla Topping
1/2 cup orange marmalade
2 tablespoons orange juice
1 teaspoon vanilla extract
Instructions
Preheat your oven to 350°F.
To prepare the Pistachio Crumble Base, mix the graham cracker crumbs and crushed pistachios with melted butter in a bowl. Take an 8-inch springform pan, press the mixture onto the bottom, and bake it for 10 minutes.
To prepare the Pistachio Filling, beat the cream cheese in a bowl with an electric mixer until it's fluffy. Gradually add in sugar, eggs, sour cream, and heavy cream, beating well after each addition. Stir in chopped pistachios and pour the mixture into the prepared crust. Bake for 45 minutes or until the filling is set.
To prepare the Orange & Vanilla Topping, stir the orange marmalade, orange juice, and vanilla extract in a small saucepan over low heat until the marmalade has melted.
Let the cheesecake cool down for 1 hour and then spread the Orange & Vanilla Topping over it and chill for 2 hours. Once the cheesecake is set, serve it chilled.
