Citrus Dream Cheesecake Recipe
Ingredients:
- Chia Seeds Base:
- - 1 cup almond flour
- - 1/4 cup chia seeds
- - 2 tablespoons maple syrup
- - 4 tablespoons coconut oil, melted
- Passion Fruit Filling:
- - 24 oz Norman's Kosher Cholov Yisroel Cream Cheese
- - 1 cup sugar
- - 4 large eggs
- - 1/2 cup passion fruit puree
- - 1 teaspoon vanilla extract
- Lemon Curd Topping:
- - 3/4 cup sugar
- - 1/2 cup fresh lemon juice
- - 4 egg yolks
- - 1/2 cup unsalted butter, cubed
Directions:
- Preheat oven to 350°F and grease a 9-inch springform pan.
- Chia Seeds Base:
- - In a medium bowl, combine almond flour, chia seeds, maple syrup, and melted coconut oil.
- - Mix until well combined and press mixture onto the bottom of the prepared springform pan.
- - Bake for 10 minutes and remove from oven. Set aside to cool.
- Passion Fruit Filling:
- - In a large bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese and sugar until smooth.
- - Add eggs one at a time, mixing well after each addition.
- - Mix in passion fruit puree and vanilla extract until well combined.
- - Pour the mixture over the cooled chia seeds base and smooth the top.
- - Bake for 50 to 55 minutes or until the cheesecake is almost set.
- - Remove from the oven and let it cool to room temperature.
- - Once cooled, refrigerate the cheesecake for at least 4 hours or overnight.
- Lemon Curd Topping:
- - In a medium saucepan, whisk together sugar, lemon juice, egg yolks, and cubed unsalted butter.
- - Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon, about 7 to 10 minutes.
- - Remove from heat and let it cool for a few minutes.
- - Pour the lemon curd over the chilled cheesecake and smooth the top.
- - refrigerate the cheesecake for at least 1 hour or until the topping sets.
