Citrus Dream Cheesecake Recipe

Ingredients:

  • Chia Seeds Base:
  • - 1 cup almond flour
  • - 1/4 cup chia seeds
  • - 2 tablespoons maple syrup
  • - 4 tablespoons coconut oil, melted

  • Passion Fruit Filling:
  • - 24 oz Norman's Kosher Cholov Yisroel Cream Cheese
  • - 1 cup sugar
  • - 4 large eggs
  • - 1/2 cup passion fruit puree
  • - 1 teaspoon vanilla extract

  • Lemon Curd Topping:
  • - 3/4 cup sugar
  • - 1/2 cup fresh lemon juice
  • - 4 egg yolks
  • - 1/2 cup unsalted butter, cubed

Directions:

  1. Preheat oven to 350°F and grease a 9-inch springform pan.

  2. Chia Seeds Base:
  3. - In a medium bowl, combine almond flour, chia seeds, maple syrup, and melted coconut oil.
  4. - Mix until well combined and press mixture onto the bottom of the prepared springform pan.
  5. - Bake for 10 minutes and remove from oven. Set aside to cool.

  6. Passion Fruit Filling:
  7. - In a large bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese and sugar until smooth.
  8. - Add eggs one at a time, mixing well after each addition.
  9. - Mix in passion fruit puree and vanilla extract until well combined.
  10. - Pour the mixture over the cooled chia seeds base and smooth the top.
  11. - Bake for 50 to 55 minutes or until the cheesecake is almost set.
  12. - Remove from the oven and let it cool to room temperature.
  13. - Once cooled, refrigerate the cheesecake for at least 4 hours or overnight.

  14. Lemon Curd Topping:
  15. - In a medium saucepan, whisk together sugar, lemon juice, egg yolks, and cubed unsalted butter.
  16. - Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon, about 7 to 10 minutes.
  17. - Remove from heat and let it cool for a few minutes.
  18. - Pour the lemon curd over the chilled cheesecake and smooth the top.
  19. - refrigerate the cheesecake for at least 1 hour or until the topping sets.
