Creamy Mango Delight Cheesecake Recipe
Ingredients:
- 2 cups Vanilla wafer crumbs
- 1/2 cup melted butter
- 24 oz Norman's Kosher Cholov Yisroel Cream Cheese
- 1 1/2 cups granulated sugar
- 4 large eggs
- 2 tsp vanilla extract
- 1/2 cup pureed fresh mango
- 1 tsp lemon juice
- 1/2 cup chopped candied pecans
Directions:
- Preheat the oven to 350°F.
- Combine the Vanilla wafer crumbs and melted butter then press them into the bottom of a 9-inch springform pan.
- Beat the Norman's Kosher Cholov Yisroel Cream Cheese and sugar in a large mixing bowl until smooth.
- Add the eggs one at a time, beating well after each addition.
- Stir in the vanilla extract and continue mixing until everything is combined.
- In a separate bowl, mix together the pureed mango and lemon juice until smooth then add it to the cream cheese mixture. Mix everything together well.
- Pour the mixture over the crust in the springform pan.
- Bake for 50 minutes or until the edges of the cheesecake are golden brown.
- Let the cheesecake cool completely then chill in the refrigerator for at least 2 hours.
- Once chilled, top the cheesecake with the chopped candied pecans and serve.
