Creamy Mango Delight Cheesecake Recipe

Ingredients:

  • 2 cups Vanilla wafer crumbs
  • 1/2 cup melted butter
  • 24 oz Norman's Kosher Cholov Yisroel Cream Cheese
  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 2 tsp vanilla extract
  • 1/2 cup pureed fresh mango
  • 1 tsp lemon juice
  • 1/2 cup chopped candied pecans

Directions:

  1. Preheat the oven to 350°F.
  2. Combine the Vanilla wafer crumbs and melted butter then press them into the bottom of a 9-inch springform pan.
  3. Beat the Norman's Kosher Cholov Yisroel Cream Cheese and sugar in a large mixing bowl until smooth.
  4. Add the eggs one at a time, beating well after each addition.
  5. Stir in the vanilla extract and continue mixing until everything is combined.
  6. In a separate bowl, mix together the pureed mango and lemon juice until smooth then add it to the cream cheese mixture. Mix everything together well.
  7. Pour the mixture over the crust in the springform pan.
  8. Bake for 50 minutes or until the edges of the cheesecake are golden brown.
  9. Let the cheesecake cool completely then chill in the refrigerator for at least 2 hours.
  10. Once chilled, top the cheesecake with the chopped candied pecans and serve.
