Ingredients:

  • 1 1/2 cups oatmeal cookie crumbs
  • 1/2 cup raisins
  • 1/4 cup melted butter
  • 2 (8oz) containers Norman's Kosher Cholov Yisroel Cream Cheese
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 2 teaspoons vanilla extract
  • 2 tablespoons bourbon
  • 1/4 cup caramel sauce
  • 3 large eggs
  • 1/2 cup peanut butter cups, chopped

Instructions:

  1. Preheat oven to 325°F (165°C).
  2. In a mixing bowl, combine oatmeal cookie crumbs, raisins, and melted butter and mix well. Firmly press onto the bottom of a greased 8-inch springform pan.
  3. Using an electric mixer, beat Norman's Kosher Cholov Yisroel Cream Cheese, sugar, cornstarch, vanilla extract, bourbon, and caramel sauce until fully combined.
  4. Add eggs one at a time and mix until fully incorporated.
  5. Pour mixture onto the crust and bake for 45 to 50 minutes or until the center is set. Let cool then refrigerate for at least 4 hours or overnight.
  6. Sprinkle chopped peanut butter cups on top of the cheesecake and serve.
