Ingredients:

  • 1 1/2 cups oatmeal cookie crumbs
  • 1/4 cup melted butter
  • 1/2 cup raisins
  • 16 oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1/2 cup Greek yogurt
  • 1/3 cup honey
  • 2 eggs
  • 1 roasted red pepper, chopped
  • 1/4 cup crumbled feta cheese
  • 1 tablespoon chopped fresh parsley

Instructions:

  1. Preheat oven to 325°F.
  2. Mix cookie crumbs, melted butter, and raisins in a bowl and press into the bottom of a 9-inch springform pan. Bake for 10 minutes.
  3. Beat cream cheese, yogurt, and honey in a large bowl until smooth.
  4. Add eggs one at a time, beating well after each addition.
  5. Pour mixture over crust.
  6. Bake for 40-45 minutes or until center is almost set.
  7. Cool cheesecake in the pan on a wire rack for 10 minutes.
  8. Remove the sides of the pan and let the cheesecake cool completely.
  9. Top the cheesecake with roasted red pepper and feta cheese.
  10. Sprinkle chopped parsley on top and serve.
