Ingredients:

  • 1 ½ cups of pitted dates, soaked in hot water for 30 minutes and drained
  • 1 cup of raw walnuts
  • 1 tablespoon of coconut oil
  • 1 tablespoon of honey
  • 8oz of Norman's Kosher Cholov Yisroel Cream Cheese
  • 1 can of full-fat coconut milk
  • 3 tablespoons of chia seeds
  • 1 teaspoon of vanilla extract
  • Zest and juice of 1 lime
  • 1 teaspoon of ground ginger
  • 2 tablespoons of honey

Instructions:

  1. Preheat the oven to 350°F.
  2. In a food processor, blend the soaked dates, walnuts, coconut oil, and honey until a sticky dough forms.
  3. Press the mixture into the bottom of a 9-inch springform pan to create the crust and set aside.
  4. In a mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese until creamy.
  5. Add in the can of coconut milk, chia seeds, and vanilla extract. Mix well.
  6. Pour the mixture on top of the crust.
  7. Bake in the preheated oven for 30-35 minutes or until the edges are slightly golden.
  8. Remove the cheesecake from the oven and allow it to cool completely. Leave it in the refrigerator for at least 3 hours before serving.
  9. In a small mixing bowl, combine the lime zest, lime juice, ginger, and honey.
  10. Pour the mixture on top of the cheesecake before serving.
