Bourbon Bliss Cheesecake

Ingredients:

  • 1 box Lemon Bar mix
  • 1/2 cup butter, melted
  • 2 containers (8oz each) Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1/2 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 2 large eggs
  • 1/2 cup caramel sauce
  • 2 tablespoons bourbon
  • 1/2 cup butterscotch chips
  • 1/4 cup heavy cream
  • 1 tablespoon bourbon

Instructions:

  1. Preheat the oven to 350°F.
  2. In a medium bowl, prepare the Lemon Bar mix according to package instructions and press into the bottom of a 9-inch springform pan. Bake for 10 minutes and then let cool.
  3. In a large mixing bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese until smooth.
  4. Add sugar and flour, and mix until well combined.
  5. Beat in eggs one at a time, mixing well after each addition.
  6. Gently fold in caramel sauce and bourbon.
  7. Pour mixture over the cooled Lemon Bar base.
  8. Bake for 35-40 minutes or until the center is almost set.
  9. Let the cheesecake cool on a wire rack for 10 minutes. Then, run a knife around the edges of the pan and release the ring. Let the cheesecake cool completely.
  10. In a saucepan, heat the butterscotch chips, heavy cream, and bourbon over medium-low heat until the butterscotch chips are melted and the mixture is smooth.
  11. Pour the butterscotch mixture over the top of the cooled cheesecake and let it set for at least 30 minutes before serving.
