Graham Cracker Base:
- 2 cups crushed graham crackers
- 1/3 cup melted butter
- 1/4 cup sugar
New York-style Filling:
- 24 oz. Norman's Kosher Cholov Yisroel Cream Cheese, softened
- 1 1/4 cups sugar
- 3 tablespoons all-purpose flour
- 4 eggs, room temperature
- 1 teaspoon vanilla extract
- 1/3 cup fresh blood orange juice
Blood Orange & Grapefruit Topping:
- 1/2 cup fresh blood orange juice
- 1/2 cup fresh grapefruit juice
- 1 cup sugar
- 2 tablespoons corn starch
- 1/2 cup water
- 1 tablespoon butter, softened
Directions:
- Preheat oven to 325°F.
- Mix together graham cracker crumbs, melted butter, and sugar. Press into the bottom of a 9-inch springform pan.
- In a large bowl, beat three containers of Norman's Kosher Cholov Yisroel Cream Cheese, sugar, and flour until smooth. Beat in eggs, one at a time, and vanilla extract until well combined. Mix in blood orange juice.
- Pour filling over the crust.
- Bake for 60 minutes or until the center is almost set.
- Remove from the oven and let it cool in the pan for 15 minutes. Run a knife around the edges of the pan to loosen the cheesecake.
- Cool completely, then chill for at least 3 hours.
