Cheesecake Delight Recipe

Lemon Bar Crust

  • 1 and 1/2 cups of crushed Lemon Bar cookies
  • 1/4 cup of melted butter

Tiramisu Filling

  • 16 ounces of Norman's Kosher Cholov Yisroel Cream Cheese
  • 3/4 cup of granulated white sugar
  • 3 eggs
  • 1/2 cup of brewed coffee
  • 2 tablespoons of Kahlúa liqueur

Berries & Cream Topping

  • 1 cup of heavy whipping cream
  • 2 tablespoons of granulated white sugar
  • 1/2 teaspoon of vanilla extract
  • 1 cup of mixed berries (strawberries, raspberries, and blueberries)

Preheat the oven to 350°F. For the Lemon Bar crust, mix the melted butter with the crushed cookies and press the mixture evenly onto the bottom of a greased 9-inch springform pan. Bake for 10 minutes and let cool. For the Tiramisu filling, beat the Norman's Kosher Cholov Yisroel Cream Cheese and sugar together until smooth. Add the eggs one at a time, beating well after each addition. Mix in the coffee and Kahlúa until well combined. Pour the mixture over the cooled crust and bake for about 40 minutes. Let cool to room temperature and refrigerate for at least 3 hours. For the Berries & Cream Topping, beat the cream, sugar, and vanilla extract in a large bowl until stiff peaks form. Spread over the cooled cheesecake and top with mixed berries. Keep refrigerated until serving.
