Cheesecake Delight
Graham Cracker Base
1 1/2 cups graham cracker crumbs
1/4 cup sugar
1/2 cup melted butter
Strawberry Filling
16 oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
1 cup sugar
1 teaspoon vanilla extract
4 eggs
1 cup fresh strawberries, pureed
Peach & Mango Topping
3 fresh peaches, peeled and sliced
1 fresh mango, peeled and sliced
1/2 cup sugar
1/4 cup water
1 tablespoon cornstarch
Instructions
Preheat oven to 350°F.
Combine graham cracker crumbs, 1/4 cup sugar, and melted butter in a bowl. Press mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes and then let cool.
In a mixing bowl, beat 16 oz of Norman's Kosher Cholov Yisroel Cream Cheese, 1 cup sugar, and vanilla extract until light and fluffy. Add eggs one at a time, beating well after each addition. Fold in strawberry puree.
Pour the cheesecake mixture on top of the cooled crust. Bake for 45-50 minutes, or until the center is almost set. Let cool and then chill in refrigerator for at least 4 hours.
To make the topping, combine peaches, mango, 1/2 cup sugar, and water in a saucepan. Bring to a boil and then reduce heat and let simmer for 5 minutes. Mix cornstarch with a tablespoon of water and add to the saucepan. Stir until thickened. Let cool and then spread on top of cheesecake.
