Cheesecake Delight

Graham Cracker Base

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup melted butter

Strawberry Filling

  • 16 oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 eggs
  • 1 cup fresh strawberries, pureed

Peach & Mango Topping

  • 3 fresh peaches, peeled and sliced
  • 1 fresh mango, peeled and sliced
  • 1/2 cup sugar
  • 1/4 cup water
  • 1 tablespoon cornstarch

Instructions

  1. Preheat oven to 350°F.
  2. Combine graham cracker crumbs, 1/4 cup sugar, and melted butter in a bowl. Press mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes and then let cool.
  3. In a mixing bowl, beat 16 oz of Norman's Kosher Cholov Yisroel Cream Cheese, 1 cup sugar, and vanilla extract until light and fluffy. Add eggs one at a time, beating well after each addition. Fold in strawberry puree.
  4. Pour the cheesecake mixture on top of the cooled crust. Bake for 45-50 minutes, or until the center is almost set. Let cool and then chill in refrigerator for at least 4 hours.
  5. To make the topping, combine peaches, mango, 1/2 cup sugar, and water in a saucepan. Bring to a boil and then reduce heat and let simmer for 5 minutes. Mix cornstarch with a tablespoon of water and add to the saucepan. Stir until thickened. Let cool and then spread on top of cheesecake.
