Creamy Orange Vanilla Cheesecake
Ingredients:
12 ounces Vanilla wafers, crushed
4 ounces unsalted butter, melted
24 ounces Norman's Kosher Cholov Yisroel Cream Cheese, at room temperature
1 1/2 cups granulated sugar
2 teaspoons pure vanilla extract
4 large eggs, at room temperature
1/4 cup freshly squeezed orange juice
1 tablespoon orange zest
Directions:
Preheat oven to 350°F. Grease a 9-inch springform pan and line the bottom with parchment paper.
In a medium bowl, combine the crushed vanilla wafers and melted butter. Mix well and press into the bottom of prepared pan. Bake for 10 minutes and set aside to cool.
In a large bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese until smooth. Add sugar and beat until well combined.
Stir in vanilla extract and beat in eggs, one at a time, making sure each egg is fully incorporated before adding the next one.
Pour the mixture over the crust and smooth the top. Bake for 50-60 minutes, or until the center is almost set. Let it cool and then keep it in the refrigerator for at least 4 hours or overnight.
In a small bowl, whisk together orange juice and zest. Spread over the top of the cooled cheesecake and serve.
