Creamy Orange Vanilla Cheesecake

Ingredients:

  • 12 ounces Vanilla wafers, crushed
  • 4 ounces unsalted butter, melted
  • 24 ounces Norman's Kosher Cholov Yisroel Cream Cheese, at room temperature
  • 1 1/2 cups granulated sugar
  • 2 teaspoons pure vanilla extract
  • 4 large eggs, at room temperature
  • 1/4 cup freshly squeezed orange juice
  • 1 tablespoon orange zest

Directions:

  1. Preheat oven to 350°F. Grease a 9-inch springform pan and line the bottom with parchment paper.
  2. In a medium bowl, combine the crushed vanilla wafers and melted butter. Mix well and press into the bottom of prepared pan. Bake for 10 minutes and set aside to cool.
  3. In a large bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese until smooth. Add sugar and beat until well combined.
  4. Stir in vanilla extract and beat in eggs, one at a time, making sure each egg is fully incorporated before adding the next one.
  5. Pour the mixture over the crust and smooth the top. Bake for 50-60 minutes, or until the center is almost set. Let it cool and then keep it in the refrigerator for at least 4 hours or overnight.
  6. In a small bowl, whisk together orange juice and zest. Spread over the top of the cooled cheesecake and serve.
