Churro Mango Cheesecake with Orange & Vanilla Topping Recipe
Ingredients:
1 package of Churros
20 oz Norman's Kosher Cholov Yisroel Cream Cheese
1 cup sugar
4 large eggs
1 teaspoon vanilla extract
1 cup chopped mango
1/2 cup orange juice
1 tablespoon orange zest
1 teaspoon vanilla extract
1/4 cup cornstarch
Instructions:
Preheat oven to 325°F.
Set a layer of churros on the bottom of a springform pan.
In a large bowl, beat cream cheese and sugar together until smooth.
Add eggs, one at a time, beating well after each addition.
Mix in vanilla and cornstarch.
Gently fold in chopped mango.
Pour mixture over churro layer in the springform pan.
Bake for 50-55 minutes or until cheesecake is set and slightly golden on top.
Cool cheesecake to room temperature.
In a small saucepan, mix orange juice, orange zest, and vanilla extract together. Bring to a simmer and cook for 5-6 minutes or until sauce has thickened slightly.
