Churro Base

  • 1 cup cinnamon graham cracker crumbs

  • 1/2 cup melted unsalted butter

Tiramisu Filling

  • 16 oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1/2 cup sugar
  • 1/4 cup heavy cream
  • 1/4 cup espresso or strong coffee
  • 1/4 cup cocoa powder

Fudge Brownie Topping

  • 1/2 cup semisweet chocolate chips
  • 1/4 cup unsalted butter
  • 1/4 cup cocoa powder
  • 1/4 cup heavy cream
  • 1/4 cup confectioners' sugar

Instructions

  1. Preheat oven to 350°F. Grease a 9-inch springform pan.
  2. In a medium bowl, mix together the cinnamon graham cracker crumbs, sugar, and melted unsalted butter until fully combined.
  3. Press the mixture into the bottom of the prepared pan and sprinkle it with cinnamon sugar mix.
  4. Bake for 10 minutes, then let it cool on a wire rack.
  5. In a large bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese and sugar until creamy.
  6. Stir in the heavy cream, espresso or strong coffee, and cocoa powder until fully combined.
  7. Pour the mixture over the cooled churro base and spread it evenly with a spatula.
  8. In a small saucepan over medium heat, melt the chocolate chips and unsalted butter together, stirring occasionally until fully melted.
  9. Remove from heat and whisk in the cocoa powder and heavy cream until fully combined.
  10. Add confectioners' sugar and whisk again until smooth and lump-free.
  11. Pour the topping over the filling and spread it evenly with a spatula.
  12. Refrigerate cheesecake for at least 2 hours or until set.
  13. Slice and serve.
