Ingredients

  • 1 cup cooked quinoa
  • 1/4 cup honey
  • 2 containers (16 oz) Norman's Kosher Cholov Yisroel Cream Cheese
  • 3/4 cup sugar
  • 2 teaspoons vanilla extract
  • 4 large eggs
  • 1/4 cup balsamic vinegar
  • 1 1/2 cups sliced strawberries
  • 1/2 cup chopped toasted almonds

Instructions

  1. Preheat oven to 350°F.
  2. In a bowl, mix cooked quinoa and honey. Press mixture onto the bottom of a greased 9-inch springform pan.
  3. In a large mixing bowl, beat cream cheese, sugar, and vanilla extract until smooth. Add eggs one at a time, beating well after each addition.
  4. Pour half of the cream cheese mixture onto the crust.
  5. In a blender, puree balsamic vinegar and strawberries until smooth. Add the remaining half of the cream cheese mixture into the blender and puree until mixed.
  6. Pour the balsamic and strawberry mixture onto the cream cheese layer. Swirl with a toothpick.
  7. Bake for 45-50 minutes, or until the edges are set and the center is slightly jiggly.
  8. Let it cool to room temperature and then chill in the refrigerator for at least 2 hours.
  9. Sprinkle chopped toasted almonds on top before serving.
