Acai Berry Base

  • 1 cup graham cracker crumbs
  • 2 tbsp sugar
  • 1/2 cup melted butter
  • 1/2 cup Acai Berry puree

Passion Fruit Filling

  • 24 oz Norman's Kosher Cholov Yisroel Cream Cheese
  • 1 cup sugar
  • 4 large eggs
  • 1/2 cup Passion Fruit puree
  • 1 tsp vanilla extract

Elderflower Topping

  • 1 cup sour cream
  • 2 tbsp sugar
  • 1 tsp Elderflower syrup
  • 1/2 tsp vanilla extract

Preheat the oven to 325°F.

Acai Berry Base:

  1. Mix graham cracker crumbs, sugar, melted butter, and Acai Berry puree in a bowl.
  2. Press mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes. Remove from oven and set aside to cool.

Passion Fruit Filling:

  1. Using an electric mixer, beat the cream cheese and sugar until light and fluffy.
  2. Beat in the eggs one at a time, scraping down the sides of the bowl after each addition.
  3. Stir in the Passion Fruit puree and vanilla extract.
  4. Pour the filling over the cooled crust and smooth the top with a spatula.
  5. Bake at 325°F for 50-60 minutes or until the center is almost set. Remove from the oven and let cool.

Elderflower Topping:

  1. In a bowl, mix sour cream, sugar, Elderflower syrup, and vanilla extract.
  2. Spread the mixture over the cooled cheesecake and chill in the refrigerator for at least 4 hours or overnight before serving.
