Vanilla Wafer Base
- 1 1/2 cups crushed vanilla wafers
- 1/4 cup sugar
- 1/2 cup melted unsalted butter
Cookies & Cream Filling
- 16 oz Norman's Kosher Cholov Yisroel Cream Cheese
- 1/2 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 1/2 cup crushed chocolate sandwich cookies
Berries & Cream Topping
- 1/2 cup heavy cream
- 1/4 cup powdered sugar
- 1/2 cup mixed berries (strawberries, raspberries, blueberries, etc)
Directions:
- Preheat oven to 350°F.
- Mix together crushed vanilla wafers, sugar, and melted butter in a bowl until well combined. Press mixture firmly into the bottom of a 9-inch springform pan.
- In a separate bowl, beat 16 oz of Norman's Kosher Cholov Yisroel Cream Cheese and sugar until smooth. Add eggs one at a time, beating well after each addition. Stir in vanilla extract and crushed chocolate sandwich cookies. Pour mixture over the crust.
- Bake for 30-35 minutes, or until center is almost set. Remove from oven and let cool completely.
- Whip heavy cream and powdered sugar together until stiff peaks form. Top cooled cheesecake with whipped cream and mixed berries.
- Refrigerate for at least 2 hours before serving.
