Vanilla Wafer Base

  • 1 1/2 cups crushed vanilla wafers
  • 1/4 cup sugar
  • 1/2 cup melted unsalted butter

Cookies & Cream Filling

  • 16 oz Norman's Kosher Cholov Yisroel Cream Cheese
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup crushed chocolate sandwich cookies

Berries & Cream Topping

  • 1/2 cup heavy cream
  • 1/4 cup powdered sugar
  • 1/2 cup mixed berries (strawberries, raspberries, blueberries, etc)

Directions:

  1. Preheat oven to 350°F.
  2. Mix together crushed vanilla wafers, sugar, and melted butter in a bowl until well combined. Press mixture firmly into the bottom of a 9-inch springform pan.
  3. In a separate bowl, beat 16 oz of Norman's Kosher Cholov Yisroel Cream Cheese and sugar until smooth. Add eggs one at a time, beating well after each addition. Stir in vanilla extract and crushed chocolate sandwich cookies. Pour mixture over the crust.
  4. Bake for 30-35 minutes, or until center is almost set. Remove from oven and let cool completely.
  5. Whip heavy cream and powdered sugar together until stiff peaks form. Top cooled cheesecake with whipped cream and mixed berries.
  6. Refrigerate for at least 2 hours before serving.
