Ingredients:

  • 14 oz Oreos, crushed
  • 1/4 cup unsalted butter, melted
  • 24 oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 4 eggs
  • 1 cup mini marshmallows
  • 1/2 cup chopped walnuts
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups mixed berries (strawberries, blueberries, raspberries)

Instructions:

  1. Preheat the oven to 350°F.
  2. In a mixing bowl, combine the crushed Oreos and melted butter. Press the mixture into the bottom of a 9-inch springform pan and bake for 10 minutes.
  3. In a large mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese, sugar, and vanilla extract until smooth and creamy. Add the eggs one at a time, beating well after each addition.
  4. Stir in the mini marshmallows and chopped walnuts.
  5. Pour the mixture over the baked crust and bake for 45-50 minutes, or until the center is almost set.
  6. Remove from the oven and let cool to room temperature. Chill in the refrigerator for at least 4 hours or overnight.
  7. In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Spread the whipped cream over the top of the cheesecake.
  8. Garnish with mixed berries.
  9. Serve chilled and enjoy!
