Chef's Delight Cheesecake Recipe

Ingredients:

  • 1 ready-to-bake Apple Pie crust
  • 3 containers (24 oz) of Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 4 eggs
  • 1 can (21 oz) of Blueberry pie filling
  • 1/2 cup brandy
  • 1/2 cup pitted cherries, sliced

Instructions:

  1. Preheat the oven to 350°F.
  2. Using your fingers, gently press the Apple Pie crust onto the bottom of a 9-inch springform pan.
  3. In a large mixing bowl, beat the cream cheese, sugar, and vanilla extract together until smooth.
  4. Add the eggs one at a time, beating well after each addition.
  5. Pour the cheesecake mixture over the prepared crust.
  6. Bake for 40-45 minutes or until the center is almost set.
  7. Remove from the oven and let cool for 10 minutes.
  8. Spoon the Blueberry pie filling on top of the cheesecake and spread it evenly.
  9. Mix together the brandy and sliced cherries in a small bowl, and then spoon the mixture over the Blueberry filling.
  10. Return the cheesecake to the oven and bake for an additional 10-15 minutes.
  11. Remove from the oven and let cool completely. Cover and refrigerate for at least 4 hours or overnight.
  12. Serve chilled and enjoy!
