Ingredients:

  • 1 cup chia seeds
  • 1/2 cup almonds
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil
  • 16 oz Norman's Kosher Cholov Yisroel Cream Cheese
  • 1/2 cup sugar
  • 2 eggs
  • 1/2 cup salted caramel sauce

Instructions:

  1. Preheat oven to 350°F. Grease a 9-inch springform pan.
  2. In a food processor, blend chia seeds, almonds, maple syrup, and coconut oil until mixture clumps together.
  3. Press mixture evenly into the bottom of the prepared pan. Bake for 10 minutes or until slightly golden. Set aside to cool.
  4. In a large mixing bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese and sugar until creamy and smooth.
  5. Add eggs and beat until well combined.
  6. Fold in salted caramel sauce until well distributed.
  7. Pour mixture into the prepared crust. Bake for 30-35 minutes or until set.
  8. Remove from oven and let cool for 10 minutes. Drizzle salted caramel sauce over the top.
  9. Chill in the refrigerator for at least 3-4 hours before serving.
