Citrus Dream Cheesecake
Graham Cracker Crust Ingredients:
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
6 tablespoons unsalted butter, melted
New York-Style Cheesecake Filling Ingredients:
3 containers Norman's Kosher Cholov Yisroel Cream Cheese (24oz total), softened to room temperature
1 cup granulated sugar
3 large eggs
1/2 cup heavy cream
1/4 cup fresh orange juice
1 teaspoon vanilla extract
1 teaspoon orange zest
Orange & Vanilla Topping Ingredients:
1 cup sour cream
2 tablespoons granulated sugar
1/2 teaspoon vanilla extract
1/4 teaspoon orange extract
Instructions:
Preheat oven to 350°F.
In a medium bowl, stir together the graham cracker crumbs, 1/4 cup sugar, and melted butter until well combined. Press the mixture into the bottom and about 1 inch up the sides of a 9-inch springform pan. Bake for 10 minutes. Remove from oven and set aside to cool.
In a large bowl, beat the softened cream cheese and 1 cup sugar together until creamy and smooth. Add the eggs one at a time, beating after each addition. Stir in the heavy cream, orange juice, vanilla extract, and orange zest until well combined.
Pour the cheesecake filling over the cooled crust and smooth the top with a spatula. Bake for 50-55 minutes or until the edges are set and the center is slightly jiggly. Turn off the oven and leave the cheesecake inside to cool for an hour before removing from the oven. Cool completely on a wire rack.
In a small bowl, whisk together the sour cream, 2 tablespoons sugar, vanilla extract, and orange extract until smooth. Spread over the top of the cooled cheesecake.
Cover and refrigerate for at least 4 hours or overnight.
When ready to serve, run a knife around the edges of the cheesecake and remove from the springform pan. Slice and serve garnished with fresh orange slices, if desired.
