Mix the crushed Vanilla Wafers and melted butter together in a bowl until fully combined. Press the mixture onto the bottom of a 9-inch springform pan. Bake for 10 minutes, then set aside to cool.
In a large mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese, sugar, and vanilla extract together until fully combined.
Add the eggs, one at a time, to the mixture and beat until just combined. Do not overmix.
Gently fold in the granola and maple syrup into the mixture.
Pour the mixture over the cooled crust and bake for 35-40 minutes until the center is almost set.
Allow the cheesecake to cool completely before placing it in the refrigerator to chill for at least 2 hours.
Once fully chilled, remove from the fridge, and sprinkle the chopped salted pistachios evenly over the top of the cheesecake.
