Graham Cracker Base
- 1 1/2 cups graham cracker crumbs

Blood Orange & Grapefruit Topping
- 2 blood oranges, peeled and segmented
- 1 grapefruit, peeled and segmented
- 1/4 cup granulated sugar
- 1/4 cup water
Instructions
- Preheat the oven to 350°F.
- In a bowl, mix together graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan.
- In another bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese until fluffy. Add sugar and continue beating until smooth. Add the eggs, one at a time, beating well after each addition.
- Stir in passion fruit puree, heavy cream, and vanilla extract until combined. Pour mixture over the crust.
- Bake for 45-50 minutes until the filling is set but slightly jiggly in the center. Allow cheesecake to cool to room temperature, then refrigerate for at least 4 hours or overnight.
- For the topping, combine sugar and water in a saucepan. Heat over medium-high heat until sugar dissolves completely.
- Add blood orange and grapefruit segments and cook, stirring occasionally, for 8-10 minutes on medium-high heat until the fruit breaks down and the sauce thickens.
- Serve the cheesecake with the fruit topping on top.
