Celestial Delight Cheesecake
Ingredients:
- 1 apple pie crust
- 16 oz Norman's Kosher Cholov Yisroel cream cheese
- 1 cup sugar
- 4 eggs
- 1 tsp vanilla extract
- 1/4 cup champagne
- 1/4 cup raspberry jam
- 1/2 cup toffee candy bits
Directions:
- Preheat oven to 325°F.
- In a large bowl, beat the cream cheese with an electric mixer until smooth.
- Add sugar and continue to beat until sugar is fully incorporated into the cream cheese.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together champagne and raspberry jam until well combined.
- Add the champagne-raspberry mixture to the cream cheese mixture and beat until combined.
- Pour the mixture into the apple pie crust and smooth the top with a spatula.
- Bake for 50-60 minutes or until the edges are slightly brown and the center is set.
- Remove from oven and let cool for 10 minutes before topping the cheesecake.
- Sprinkle the toffee candy bits over the top of the cheesecake.
- Chill the cheesecake in the fridge for at least 2 hours before serving.
