Cheesecake Divine
Chia Seeds Base Ingredients
1 cup almond flour
1/2 cup chia seeds
1/4 cup coconut oil, melted
1/4 cup honey
Strawberry Filling Ingredients
16 oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
1/2 cup sugar
2 eggs
1 tsp vanilla extract
1 cup fresh strawberries, pureed until smooth
Berries & Cream Topping Ingredients
1/2 cup heavy cream
2 tbsp powdered sugar
1 tsp vanilla extract
1 cup mixed berries (strawberries, blueberries, blackberries, raspberries)
Instructions
Preheat the oven to 350°F.
Make the chia seeds base: Combine all the base ingredients in a large mixing bowl and stir until well combined. Press the mixture into the bottom of a 9-inch springform pan.
Make the strawberry filling: In a large mixing bowl, beat the softened cream cheese and sugar until light and fluffy. Add the eggs and vanilla extract, and beat until well combined. Beat in the strawberry puree until well combined.
Pour the filling over the chia seeds base in the springform pan.
Bake for 45-50 minutes, or until the cheesecake is set around the edges and slightly jiggly in the center.
Let the cheesecake cool to room temperature, then chill in the refrigerator for at least 2 hours.
Make the berries & cream topping: In a medium mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
Top the cheesecake with the mixed berries and dollop the whipped cream mixture on top.
