Ingredients:

  • 1 ½ cups Vanilla Wafer crumbs
  • 1/2 cup (1 stick) Unsalted Butter, melted
  • 3 containers of Norman's Kosher Cholov Yisroel Cream Cheese, softened (24 oz)
  • 1 ¼ cups Granulated Sugar
  • 1/3 cup Elderflower Liqueur
  • 3 Large Eggs
  • 1 teaspoon Pure Vanilla Extract
  • 1 cup White Chocolate Chips
  • 1/2 cup Heavy Cream

Instructions:

  1. Preheat your oven to 325°F.
  2. Combine the Vanilla Wafer crumbs and melted butter in a bowl. Press into the bottom of a 9-inch springform pan. Bake the crust for 10 minutes. Remove from the oven and let it cool.
  3. Prepare the filling by beating the Norman's Kosher Cholov Yisroel Cream Cheese and sugar until smooth with an electric mixer. Add Elderflower liqueur, eggs, and vanilla extract, then mix in low speed until combined.
  4. Pour the mixture into the crust and bake for 45-50 minutes until the edges are set and the center is jiggly. Remove from the oven and allow to cool completely to room temperature. Refrigerate for 2 hours.
  5. To prepare the cheesecake truffle topping, place white chocolate chips and heavy cream in a medium microwave-safe bowl. Heat in 20-second intervals until melted, stirring after each one. Let it cool for a few minutes.
  6. Spread the cheesecake truffle topping over the chilled cheesecake. Put it back in the refrigerator for at least 30 minutes.
  7. Decorate the cheesecake with a sprinkle of vanilla wafer crumbs on top, serve and Enjoy!
