Avo-Lime Cheesecake with Date & Walnut Crust and Lime & Ginger Topping

Ingredients:

  • For the Crust:
    • 1 1/2 cups of pitted dates
    • 1 cup of walnuts
    • 1/2 teaspoon of salt
  • For the Filling:
    • 2 ripe avocados
    • 8 oz of Norman's Kosher Cholov Yisroel Cream Cheese
    • 1/2 cup of raw honey
    • 1/4 cup of lime juice
    • 1/4 teaspoon of salt
    • Zest of one lime
  • For the Topping:
    • 1/2 cup of sour cream
    • 1 tablespoon of lime juice
    • 1 tablespoon of honey
    • 1/2 teaspoon of ginger powder

Directions:

  1. Preheat your oven to 350°F (175°C).
  2. For the crust, blend the pitted dates, walnuts and 1/2 teaspoon of salt in a food processor until it reaches crumbly texture.
  3. Press the crust mixture into the bottom of a 9-inch springform pan.
  4. Bake the crust for 10-12 minutes or until golden brown.
  5. While the crust is baking, prepare the filling.
  6. In a food processor, blend the avocados, 8 ounces of Norman's Kosher Cholov Yisroel Cream Cheese, honey, lime juice, salt, and lime zest until it reaches a smooth texture.
  7. Pour the filling mixture into the baked crust and smooth it out evenly.
  8. Refrigerate for at least 2 hours or until the filling has firmed up.
  9. For the topping, whisk together the sour cream, lime juice, honey, and ginger powder in a small bowl.
  10. Spoon the topping over the cooled cheesecake.
  11. Refrigerate the cheesecake for 1 hour or until the topping has set.
  12. Serve and enjoy!
