Avo-Lime Cheesecake with Date & Walnut Crust and Lime & Ginger Topping
Ingredients:
For the Crust:
1 1/2 cups of pitted dates
1 cup of walnuts
1/2 teaspoon of salt
For the Filling:
2 ripe avocados
8 oz of Norman's Kosher Cholov Yisroel Cream Cheese
1/2 cup of raw honey
1/4 cup of lime juice
1/4 teaspoon of salt
Zest of one lime
For the Topping:
1/2 cup of sour cream
1 tablespoon of lime juice
1 tablespoon of honey
1/2 teaspoon of ginger powder
Directions:
Preheat your oven to 350°F (175°C).
For the crust, blend the pitted dates, walnuts and 1/2 teaspoon of salt in a food processor until it reaches crumbly texture.
Press the crust mixture into the bottom of a 9-inch springform pan.
Bake the crust for 10-12 minutes or until golden brown.
While the crust is baking, prepare the filling.
In a food processor, blend the avocados, 8 ounces of Norman's Kosher Cholov Yisroel Cream Cheese, honey, lime juice, salt, and lime zest until it reaches a smooth texture.
Pour the filling mixture into the baked crust and smooth it out evenly.
Refrigerate for at least 2 hours or until the filling has firmed up.
For the topping, whisk together the sour cream, lime juice, honey, and ginger powder in a small bowl.
Spoon the topping over the cooled cheesecake.
Refrigerate the cheesecake for 1 hour or until the topping has set.
