Cheesy Garlic & Caramel Kosher Cheesecake
Ingredients:
For the Base:
2 cups Parmesan cheese
1/2 cup butter, melted
3 cloves garlic, minced
1/4 cup bread crumbs
For the Filling:
3 containers (8 oz each) of Norman's Kosher Cholov Yisroel Cream Cheese
1/2 cup sugar
3 eggs
1 teaspoon vanilla extract
For the Topping:
1/2 cup sugar
1/4 cup water
1/2 cup heavy cream
2 tablespoons butter
Directions:
Preheat the oven to 350°F.
In a food processor, mix the Parmesan, melted butter, garlic, and bread crumbs until they form a crumbly mixture. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then let cool.
In a large bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese with sugar until smooth. Add the eggs and vanilla, and beat until fully combined. Pour the mixture into the cooled crust.
Bake for 40-45 minutes, until the center is almost set. Remove from the oven and let cool on a wire rack.
While the cheesecake is cooling, make the caramel sauce. In a saucepan, heat the sugar and water until the sugar dissolves and turns a golden brown. Slowly pour in the heavy cream and stir until combined. Add the butter and stir until melted and fully mixed in. Remove from heat and allow to cool.
Once the cheesecake is completely cooled, drizzle the caramel sauce over the top. Serve and enjoy!
