Strawberry Balsamic Cheesecake with Oreo Base
Ingredients:
25 Oreo cookies, crushed
6 tablespoons unsalted butter, melted
24 oz. Norman's Kosher Cholov Yisroel Cream Cheese, softened
1 cup granulated sugar
1 teaspoon vanilla extract
4 large eggs
1 cup fresh strawberries, chopped
1/4 cup balsamic vinegar
1/4 cup honey
Instructions:
Preheat oven to 350°F. Grease a 9-inch springform pan.
Mix crushed Oreo cookies and melted butter. Press mixture into bottom of prepared pan with the back of a spoon. Bake for 10 minutes. Set aside to cool.
In a large mixing bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese, sugar, and vanilla until creamy. Add eggs one at a time, beating well after each addition. Fold in chopped strawberries.
Pour cheesecake mixture into cooled Oreo crust.
Bake for 50-55 minutes, or until center is almost set. Remove from oven and cool to room temperature.
In a small saucepan, mix balsamic vinegar and honey. Bring to a boil over medium heat. Reduce heat and simmer until mixture thickens and is reduced by half, stirring often, about 10 minutes.
Pour balsamic glaze over cooled cheesecake.
Refrigerate cheesecake until well chilled, at least 2 hours or overnight.
