Coffee Lover's Heaven Cheesecake

Vanilla Wafer Base

  • 2 cups vanilla wafer crumbs
  • 6 tbsp unsalted butter, melted
  • 2 tbsp granulated sugar

Instructions:

  1. Preheat the oven to 350°F.
  2. In a bowl, mix together the vanilla wafer crumbs, melted butter, and granulated sugar until well combined.
  3. Press the mixture into the bottom of a 9-inch springform pan.
  4. Bake the crust for 8-10 minutes, then remove from the oven and let it cool completely.

Tiramisu Cheesecake Filling

  • 16 oz Norman's Kosher Cholov Yisroel Cream Cheese
  • ½ cup granulated sugar
  • 1 tsp vanilla extract
  • 2 tbsp instant coffee granules
  • 3 eggs, room temperature
  • 1 cup sour cream
  • 1/3 cup mascarpone cheese
  • 1 tbsp all-purpose flour

Instructions:

  1. Preheat the oven to 350°F.
  2. In a mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese and granulated sugar together until light and fluffy.
  3. Add the vanilla extract and instant coffee granules to the mixture, and beat until well combined.
  4. Add the eggs, one at a time, beating well after each addition.
  5. Add the sour cream, mascarpone cheese, and all-purpose flour to the mixture, and beat until well combined and smooth.
  6. Pour the filling onto the cooled crust.
  7. Bake the cheesecake for 45-50 minutes, or until the edges are set and the center is slightly jiggly.
  8. Let the cheesecake cool to room temperature, then refrigerate for at least 2 hours.

Whipped Cream Topping

  • 1 cup heavy cream
  • 2 tbsp granulated sugar
  • 1 tsp vanilla extract

Instructions:

  1. In a mixing bowl, whip the heavy cream, granulated sugar, and vanilla extract together until stiff peaks form.
  2. Spread the whipped cream over the chilled cheesecake.
  3. Garnish with additional vanilla wafer crumbs and chocolate shavings, if desired.
