Coffee Lover's Heaven Cheesecake
Vanilla Wafer Base
- 2 cups vanilla wafer crumbs
- 6 tbsp unsalted butter, melted
- 2 tbsp granulated sugar
Instructions:
- Preheat the oven to 350°F.
- In a bowl, mix together the vanilla wafer crumbs, melted butter, and granulated sugar until well combined.
- Press the mixture into the bottom of a 9-inch springform pan.
- Bake the crust for 8-10 minutes, then remove from the oven and let it cool completely.
Tiramisu Cheesecake Filling
- 16 oz Norman's Kosher Cholov Yisroel Cream Cheese
- ½ cup granulated sugar
- 1 tsp vanilla extract
- 2 tbsp instant coffee granules
- 3 eggs, room temperature
- 1 cup sour cream
- 1/3 cup mascarpone cheese
- 1 tbsp all-purpose flour
Instructions:
- Preheat the oven to 350°F.
- In a mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese and granulated sugar together until light and fluffy.
- Add the vanilla extract and instant coffee granules to the mixture, and beat until well combined.
- Add the eggs, one at a time, beating well after each addition.
- Add the sour cream, mascarpone cheese, and all-purpose flour to the mixture, and beat until well combined and smooth.
- Pour the filling onto the cooled crust.
- Bake the cheesecake for 45-50 minutes, or until the edges are set and the center is slightly jiggly.
- Let the cheesecake cool to room temperature, then refrigerate for at least 2 hours.
Whipped Cream Topping
- 1 cup heavy cream
- 2 tbsp granulated sugar
- 1 tsp vanilla extract
Instructions:
- In a mixing bowl, whip the heavy cream, granulated sugar, and vanilla extract together until stiff peaks form.
- Spread the whipped cream over the chilled cheesecake.
- Garnish with additional vanilla wafer crumbs and chocolate shavings, if desired.
