Ingredients:

  • 1 cup graham cracker crumbs
  • 4 tablespoons unsalted butter, melted
  • 1/3 cup grated smoked gouda
  • 2 tablespoons chopped fresh chives
  • 2 containers (8 oz each) of Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 cup sweet potato puree
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup butterscotch chips
  • 1/4 cup heavy cream
  • 1 tablespoon bourbon

Instructions:

  1. Preheat oven to 325°F.
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, grated smoked gouda, and chopped chives until well combined. Press mixture onto bottom of a 9-inch springform pan. Bake for 8-10 minutes and let cool.
  3. In a mixing bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese and sugar until smooth. Add eggs, one at a time, and mix well after each addition.
  4. Stir in sweet potato puree, maple syrup, and vanilla extract until well combined.
  5. Pour mixture onto prepared crust. Bake for 35-40 minutes or until center is almost set.
  6. In a saucepan, combine butterscotch chips, heavy cream, and bourbon. Cook over low heat until butterscotch is melted and mixture is smooth.
  7. Serve cheesecake with butterscotch topping drizzled over individual slices.
