Ingredients:
- 1 cup graham cracker crumbs
- 4 tablespoons unsalted butter, melted

- 2 containers (8 oz each) of Norman's Kosher Cholov Yisroel Cream Cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 cup sweet potato puree
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1/2 cup butterscotch chips
- 1/4 cup heavy cream
- 1 tablespoon bourbon
Instructions:
- Preheat oven to 325°F.
- In a mixing bowl, combine graham cracker crumbs, melted butter, grated smoked gouda, and chopped chives until well combined. Press mixture onto bottom of a 9-inch springform pan. Bake for 8-10 minutes and let cool.
- In a mixing bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese and sugar until smooth. Add eggs, one at a time, and mix well after each addition.
