Coffee Lover's Cheesecake
Graham Cracker Base
- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/4 cup melted butter
Mix all ingredients and press onto the bottom of a 9-inch springform pan.
Plain Cheesecake Filling
- 2 containers of Norman's Kosher Cholov Yisroel Cream Cheese (16 oz)
- 1 cup sugar
- 1 tsp vanilla extract
- 4 eggs
Preheat oven to 350°F. Beat cream cheese and sugar in a large bowl until creamy. Add vanilla extract and eggs, one at a time, mixing on low speed after each addition until blended. Pour over the graham cracker crust.
Mocha Latte Topping
- 1/2 cup strong coffee
- 1/4 cup chocolate chips
- 2 tablespoons sugar
- 1 container of Norman's Kosher Cholov Yisroel Cream Cheese (8 oz)
Combine coffee, chocolate chips, and sugar in a small saucepan. Cook over medium heat, stirring constantly until chocolate chips are melted. Remove from heat and let cool slightly. Beat cream cheese in a medium bowl until creamy. Gradually add the chocolate mixture, beating after each addition until well blended. Spread over the top of the cheesecake.
Bake for 45-50 minutes or until the center is almost set. Cool completely and refrigerate for at least 4 hours before serving.
