Cinnamon Roll Base

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 tsp salt

Cinnamon & Apple Filling

  • 2 medium apples, peeled, cored, and diced
  • 2 tbsp unsalted butter
  • 2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 8 oz Norman's Kosher Cholov Yisroel Cream Cheese, room temperature
  • 1/3 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract

Chocolate Ganache Topping

  • 1/2 cup heavy cream
  • 4 oz semisweet chocolate, chopped

Instructions:

  1. Preheat oven to 350°F (180°C).
  2. For the cinnamon roll base, in a large bowl whisk together flour, granulated sugar, and salt. Using a pastry blender or your fingertips, cut in butter until mixture resembles coarse crumbs.
  3. In a separate bowl, whisk together milk and egg. Add to flour mixture and stir until a soft dough forms.
  4. On a lightly floured surface, roll dough into a 1/4-inch thick rectangle.
  5. For the filling, in a medium saucepan, melt butter over medium heat. Add diced apples, cinnamon, and nutmeg, and cook until softened, about 5 minutes. Remove from heat and let cool.
  6. In a separate bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese and granulated sugar until smooth. Beat in egg and vanilla extract.
  7. Spread cream cheese mixture over dough, leaving a 1-inch border around the edges. Top with cooled apple mixture and sprinkle with brown sugar, cinnamon, and nutmeg.
  8. Roll dough tightly, starting with the long side closest to you. Pinch edges to seal and transfer to a greased 9-inch springform pan.
  9. Bake for 35-40 minutes until golden brown and set.
  10. For the ganache topping, in a saucepan, heat heavy cream over medium heat until just simmering.
  11. Remove from heat and stir in chocolate until melted and smooth.
  12. Let cheesecake cool for 10 minutes before removing from pan and drizzling with chocolate ganache.
