A Night in Dublin Cheesecake

Ingredients:

  • 2 cups Vanilla wafer crumbs
  • 1/2 cup unsalted butter, melted
  • 2 containers (16 oz) Norman's Kosher Cholov Yisroel Cream Cheese
  • 1/2 cup granulated sugar
  • 1/4 cup Irish whiskey
  • 1 tsp pure vanilla extract
  • 2 large eggs
  • 1/4 cup heavy cream
  • 4 oz dark chocolate, melted and cooled slightly
  • 1/2 cup shelled salted pistachios, chopped

Instructions:

  1. Preheat the oven to 325°F. Grease a 9-inch springform pan.
  2. In a medium bowl, combine the Vanilla wafer crumbs and melted butter. Press the mixture into the bottom of the prepared pan. Bake for 10 minutes, or until the crust is set. Allow to cool completely.
  3. In a large bowl, using an electric mixer, beat the Norman's Kosher Cholov Yisroel Cream Cheese until smooth. Add the sugar and beat until well blended. Mix in the whiskey and vanilla extract. Add the eggs one at a time, beating well after each addition. Mix in the heavy cream.
  4. Remove 1 cup of the cream cheese mixture and mix it with the melted chocolate. Spread this mixture evenly over the cooled crust.
  5. Pour the remaining cream cheese mixture over the chocolate layer.
  6. Bake for 45-50 minutes, or until the cheesecake is set but still slightly jiggly in the center.
  7. Allow the cheesecake to cool completely, then chill in the refrigerator for at least 4 hours or overnight.
  8. When ready to serve, remove the cheesecake from the pan and sprinkle the chopped pistachios over the top.
