Apple Mango Delight Cheesecake Recipe

Ingredients:

  • 1 1/2 cups apple pie crust crumbs
  • 1/2 cup unsalted butter, melted
  • 16 oz Norman's Kosher Cholov Yisroel Cream Cheese (2 containers), softened
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 ripe mango, peeled and diced
  • 1/4 cup fresh lemon juice
  • 1/4 cup water
  • 2 tbsp cornstarch
  • 1/4 cup brandy
  • 1/4 cup cherry preserves

Directions:

  1. Preheat oven to 350°F.
  2. Mix the apple pie crust crumbs and melted butter, press onto the bottom of a 9-inch springform pan. Bake for 5-7 minutes. Let cool.
  3. In a bowl, beat the Norman's Kosher Cholov Yisroel cream cheese and sugar until smooth. Add in the eggs and mix well.
  4. In a blender, puree the mango, lemon juice, water, and cornstarch until smooth. Pour into the cream cheese mixture and stir until thoroughly combined.
  5. Pour the mango mixture over the crust and bake for 30-35 minutes, or until set. Let cool.
  6. In a saucepan, heat the brandy and cherry preserves over low heat until it forms a syrupy texture. Spread over the cooled cheesecake.
  7. Refrigerate for at least 2 hours before serving.
