Apple Mango Delight Cheesecake Recipe
Ingredients:
- 1 1/2 cups apple pie crust crumbs
- 1/2 cup unsalted butter, melted
- 16 oz Norman's Kosher Cholov Yisroel Cream Cheese (2 containers), softened
- 1/2 cup granulated sugar
- 2 eggs
- 1 ripe mango, peeled and diced
- 1/4 cup fresh lemon juice
- 1/4 cup water
- 2 tbsp cornstarch
- 1/4 cup brandy
- 1/4 cup cherry preserves
Directions:
- Preheat oven to 350°F.
- Mix the apple pie crust crumbs and melted butter, press onto the bottom of a 9-inch springform pan. Bake for 5-7 minutes. Let cool.
- In a bowl, beat the Norman's Kosher Cholov Yisroel cream cheese and sugar until smooth. Add in the eggs and mix well.
- In a blender, puree the mango, lemon juice, water, and cornstarch until smooth. Pour into the cream cheese mixture and stir until thoroughly combined.
- Pour the mango mixture over the crust and bake for 30-35 minutes, or until set. Let cool.
- In a saucepan, heat the brandy and cherry preserves over low heat until it forms a syrupy texture. Spread over the cooled cheesecake.
- Refrigerate for at least 2 hours before serving.
