Café Kahlua Cheesecake
Ingredients:
- 1 cup basbousa (semolina cake) crumbs
- 1/4 cup melted unsalted butter
- 2 containers (16 oz total) Norman's Kosher Cholov Yisroel Cream Cheese
- 1/2 cup granulated sugar
- 2 teaspoons vanilla extract
- 3 large eggs
- 1/4 cup sour cream
- 1/4 cup Kahlua coffee liqueur
- 1 tablespoon espresso powder
- 1/2 cup heavy cream
Instructions:
- Preheat the oven to 350°F.
- Combine basbousa crumbs and melted butter. Press mixture firmly onto the bottom of a 9-inch springform pan.
- In a large mixing bowl, beat the cream cheese, sugar and vanilla extract until smooth.
- Add eggs one at a time, beating after each addition and until well blended.
- Stir in sour cream and mix well.
- Pour the filling onto the crust and smooth the top.
- Bake for 40-45 minutes or until the center is almost set.
- Meanwhile, put Kahlua, espresso powder, and heavy cream in a small saucepan over medium heat. Stir constantly until it comes to a simmer.
- Remove from heat and let it cool to room temperature.
- Once cheesecake is done baking, let it cool for 10 minutes.
- Spread Kahlua mixture over the top of the cheesecake.
- Refrigerate for at least 4 hours or overnight.
- Serve chilled and enjoy!
